With cooler temperatures comes the desire to curl up with a blanket and a glass of
wine. Nothing chases away the chill of autumn better than a rich Merlot!
However, one main challenge that many face is pairing the right wine with their meal. White, red, sweet, or dry; what's to be served when both seafood and steak are on the menu?
Luckily, Kevin Cornish, Beverage Director at acclaimed restaurant Canoe, knows a thing or two about delicious wine.
There are three main things to keep in mind when pairing wine with food: the protein's fat content, the acidity of the wine, and the sec-ondary components of the meal. Foods such as fruit can alter the flavor of the wine in ways you might not expect.
“Spicy foods are difficult to pair with and need a sweet wine," says Cornish, "If spicy foods aren’t paired with sweeter wines, the taste will become bitter.” Experimentation is key, how-ever, and the more you try the more adept you’ll become at pairing flavors. Remember, there are no hard and fast rules! Wine should always be a way to enhance the dish that you’re serving.
“In Rias Baixas, Spain, they make wine to pair with seafood and more coastal cui-sine since they are a coastal town. In Italy, they make red wines to pair well with lamb since lamb is prepared across Italy,” Cornish explains. If you’re having shrimp, find a wine made near the coast. A good steak? Inland vineyards won’t steer you wrong.
And with the changing seasons comes new opportunity for wine pairings. According to Cornish, Malbec is a popular fall choice because of its spice content and peppery notes. Canoe is constantly changing up its selection as well; new combinations and wines from around the world are always on the menu, especially when the seasons change.

PUMPKIN ALESAlthough Halloween and Thanksgiving occur in late fall, ales brewed with nutmeg, cinnamon, ginger, allspice and real pumpkin have become so popular, this style is hitting store shelves as early as mid-August. Medium-bodied, sweet, and complex, this style is great to pair with roasted poul-try, spicy vegetables, and numerous desserts including chocolate cake! Usually between five and seven percent alcohol by volume, look for the imperial and barrel-aged versions, as well as those that are more boozy, thick, and sweeter beginning around eight percent to double-digit levels.

Longing for an upscale restaurant without driving to Buckhead? Look no further than 101 Steak, the newest fine dining addition to Vinings. The restaurant opened its doors this past July in the former Social Vinings space and presents itself as a traditional steakhouse, but offers so much more.
My husband and I stopped by on a Thursday night and were pleas-antly surprised to see the place buzzing with diners. The dining room is beautiful. The dining banquettes are plush with enclosed booths, however, unlike other steakhouses, you won’t need to whip out a flashlight app to read the menu.
Executive Chef Joey Ahn clearly put his mark on the menu with dishes like the Tempura Maine Lobster Tail with sambal aioli ($17) and Wagyu Beef Carpaccio with sour gherkins ($13). Other appetizers include East and West Coast Oysters with sour orange cocktail sauce (market price), Sea Salted Beet Salad ($10) and Braised Fennel Meatballs ($9). We opted for the Maryland Crab Cakes with vegetable slaw and peppadew remoulade ($16). This proved to be a delicious choice. The crab cake was heavy on the crab, and light on the filling, and the vegetable slaw was zesty with a nice crunch.L CONTINUED >

Yes, 101 Steak has a great steak selection but don’t overlook the other entrees. There’s the Green Egg Pork Chop served with a Coca Cola gastrique and braised collard greens ($28), as well as the Roasted Springer Mountain Chicken Roulade with butter-milk whipped potatoes and grilled asparagus ($21). I couldn’t resist ordering the Frutti de Mare, a linguini dish tossed with octopus, clams, shrimp, lobster and a spicy tomato sauce ($39). The seafood was delight-fully fresh, and the tomato sauce packed just the right amount of heat. There was plenty of lobster and enough left over for lunch the next day!
My husband opted for the 16oz 101 Steak Delmonico ($46). It was thick, tender, and super juicy with a nice amount of perfectly charred fat you probably shouldn’t eat (but do anyway because it’s irresistible). Being (not very) health conscious, he paired it with the pimento mac and cheese topped with crumbled bacon ($7.50). I’m defenseless against creamy, gooey mac and cheese and the one at 101 Steak is no exception. It’s served bubbling hot in a cast iron pot and is the perfect sharing size.
We couldn’t leave without dessert – and if you have to pick just one dessert, go for the chocolate cake. It’s made locally by the Garner Girls. The chocolate frosting is creamy and thick, and nicely distributed between the layers of cake. The cake itself actually tastes like chocolate and not cloyingly sweet.
101 Steak is great for an upscale night out whether you’re a party of two or a large group. It could easily become your new favorite special occasion spot. The service is spectacular and the food is delicious and delivers in quality.

Most wineries start as a family business. Phifer Pavitt is not one of those. Some wineries are owned by a company with a lot of
money and a business plan. Again, not Phifer Pavitt.Instead Phifer Pavitt was hatched when Ringgold, Georgia-born
Suzanne Phifer Pavitt was drinking wine with her husband, Shane Pavitt, in Italy and played a game of ‘What if.’ Both wrote down what they would love to do in 10 years. It turns out that Phifer, who at the time worked for a Fortune 500 company, and Pavitt, a stock trader, had one common dream: to own a small boutique winery and make artisan wine.
“I’m a girl who loves a project and over the next year our date night would be going all over the western half of the U.S. looking at different places. The path led us to 24 acres of never developed land in Calistoga, CA,” she says. “We made an offer on the back of a restaurant’s menu, sent it to the owner and 30 days later, we owned some 'potential'.”
For the next couple of years, Phifer Pavitt and her husband worked on clearing the land and talking about the 'potential'. “It was a great adventure and it was all on-the-job training. With the wine business, you don’t mess around. It’s costly and time consuming."
The duo decided to make what they liked to drink, which was Cabernet Sauvignon and Sauvignon Blanc. "The joke was that the worst case scenario was that if no one like it, our family and friends would still drink our wine,” she said with a laugh.
They partnered with the Temple Family Vineyards’ Lakespring Ranch, an organic estate vineyard that produces grapes with intensely favorable berries. The Sauvignon Blanc comes from the Juliana Vineyards ranch, also known for excellent fruit.

“We didn’t have the ‘if you build it, they will come,’ philosophy. We have been incredibly blessed. My intuition told me that if we stuck to our guns and did what we believed in and were good stewards of the land, it would happen.”
Today, the winery produces between 1,600 to 1,800 cases of award-winning Date Night wine a year. It ’s called Date Night because every important decision the couple ever made occurred on date night. About 85 percent of the wine is sold directly to those on their mailing list or who visit the winery in person. It is also available in a few restaurants nationwide, including C&S Seafood in Smyrna.
Like any successful entrepreneur, the biggest challenge is con-trolling the growth, getting things done while still being hands on. “I can’t clone myself. I am the brand ambassador but it gets more challenging each year.” Shane serves as the company’s CFO and full-time dad to their two teenage sons.
For Phifer Pavitt, her life in the Napa Valley is much different from her years in north Georgia, where her family didn’t even drink. Though it seems as if the life she created is the one she is supposed to be living. She has cultivated her dream with passion and a strong desire to responsibly care for the land. And with perserverance and hard work, Phifer Pavitt is making her dream reality.
“I believe in karma and I have a Southern work ethic. When Shane asked my father for my hand, he told him he could if he could handle me.” Adding, “I’m a bit of a pistol.”

Parting Thoughts
VETTING VINO DON'T JUDGE A GLASS BY ITS COST.
On our first dinner date, my wife, Liz, asked me to order a bottle of wine. Narrowly avoiding the onset of panic, I surreptitiously
chose an unfamiliar bottle based upon its affordable price-point. “A finer choice could not be made!” exclaimed François, our flamboy-
ant French waiter, who evidently sensed my desire to impress without the benefit of private equity funding. He promised it would “demon-strate the confident elegance that reflected a life well-lived, approaching like a trusted friend, awakening the senses, bursting adventurously with a complex flavor of incredible intensity and retaining a dry personality without sacrificing sweetness or an unforgettably bold finish that brings happiness to all who have the pleasure of making the acquaintance.” That sounded like the best $38 I would ever spend.
Over the years, Liz and I since have enjoyed spectacular glasses of dry Falanghina on Italy’s Amalfi Coast; a wonderfully acidic, Assyrtiko in Santorini, Greece; and, a dramatic Cabernet Sauvignon at the Silver Oak vintage reveal in Napa Valley. Each of them different, yet memorable.
One favorite experience involved visiting a small family-owned vine-yard where the owner demonstrated the patient nurturing needed to pro-vide mottled sunlight to the individual grapes. Over a picnic lunch in the
vineyard, she explained each vintage had a unique personality based upon the grape varietal, soil condition, weather and a host of other variables. In short, the life experience of each grape uniquely shapes the ultimate character of the wine. To complicate matters, each person tastes the wine uniquely on their pallet based upon individual senses, food pairing and other factors. This is why every taste of wine can be unique!
Judgments about the quality of a particular wine based upon pre-conceived ideas about its color, pedigree, and cost rarely correlate to the actual performance of the grape or appreciation of the pour. Wines, like people, need to be vetted based on actual experience to be judged.
When you enjoy your next bottle of vino, swirl your glass and let the character of the wine slowly reveal itself to you. Allow your pallet to search for the aromatic tastes of black cherries, tart apples, oak, butter or even crushed oyster shells. You may be surprised by the wine's "person-ality" and what you taste when you're really paying attention.
I myself remain hopeful that François will one day deliver the eulogy at my funeral. It would be nice to have someone attest that I “demonstrated the confident elegance that reflected a life well-lived."
I’ll drink to that.
