The journey that led us to our eclectic and exciting

wine list began in October 2014. The Stone House

at Clove Lakes is a one of kind venue nestled on a

tiny island in the heart of picturesque Clove Lakes.

The historic building and beautiful grounds are

home to Staten Island’s premier restaurant. The

restaurant boasts gourmet contemporary American

cuisine. In March 2016, Chef’s Loft at The Stone

House was born. Chef’s Loft is an intimate five

course dinner with wine pairing by our sommelier,

Roberto Hernandez. The wine paired dinner is

prepared for sixteen exclusive reservations by

Chef/Owner, Peter Botros, while guest watch. The

Chef’s Loft menu changes monthly and gave us the

opportunity to taste and collect many unique and

wonderful wines from different regions of the world.

That collection is the foundation of our wine list.

Rosé wine isn’t simply defined by color. It is an intermediate style between red and white

wines. Rosé wines happens when the winemaker decides how much color from the skins of red grapes wants to extract to give

the blush and to keep freshness and crispiness for his wines.

One of the most famous grape, chardonnay can be versatile depending upon the

winemaker. It picks up buttery aromas and toasty or vanilla scents from aging in Oak. It

can be made to be crisp and stony, or brilliantly fresh with green apple and citrus

flavors.

One of the most beautiful aspects of these wines is it scent — they actually smell of

flowers. Somehow they can be dense, spicy fruit and layer into unbelievably complexity,

streaked with mineral or fruit forward, smoked meat or tar, wild herb, and leather.
