Having arrived as chef/owner at The Hop Pole Inn, Bewdley, Daren Bale has overseen anincredible transition, consistently delivering the highest quality dining whilst beinginstrumental in moving the business forward from traditional country house hotel to athriving pub restaurant and newest kid on the block.

Daren’s commitment to local buying, as well as his business acumen from cost control tosales and marketing, has allowed him to develop a unique blend of value for money withquality food whilst also giving a ‘face’ to the kitchen at The Hop Pole Pub Restaurant ofwhich the local market can relate to. Daren is hosting a series of gourmet eveningscelebrating the use of local produce called “The Taste of Worcestershire”. These nights giveguests the chance to indulge in great local produce used in innovative dishes. From apple andpear orchards (synonymous with Worcestershire) to dairy farms and small meat producers,Daren is committed to supporting local farmers and growers and sourcing the highest qualityproduce. Most recently Daren has engaged at another level when he has learnt to make ahard goats cheese using milk from the nearby famous Mar Goats. Next is sausage makingand developing the allotments in the grounds of the Hop Pole.

Worcestershire based Alan Coxon has established a reputation as one of the world’s favouriteTV chefs and presenters, with exceptional culinary talent and an unparalleled knowledge forthe earliest origins of ingredients. Alan is recognised as a leader in his field, and a highly-respected player by both the world of TV media and by his peers in the food industry. Alanhas worked in Michelin star restaurants in Monte Carlo and opened the largest 4-star hotelin Europe, leading an international culinary brigade of over 68 chefs. He created a globallyunique, multi award winning historic food range, including a 15th century Mediaeval“Ale-Gar”, a product that he is now exporting around the world.

Now in his 13th year of presenting TV shows, ranging from Ever Wondered About Food, OpenHouse and UK Foods Great Food Live to name but a few, 2012 sees the launch of his new 5-part food and travel series to be screened on a food network. A new cookbook of the samename will also accompany the series entitled “From Birmingham to Bombay”. Alan can beseen giving cookery demonstrations, around the world and also represents the UK as a judgeat the International Taste and Quality Institute of Brussels. Recently the judge became thejudged as Alan is a shortlisted finalist for the Midlands Entrepreneur of the Year Award 2012.

Felice TocchiniCelebrity Italian Chef

Judy GardnerOwner of Manor Farm and founder of Eckington Manor Cookery School

Judy Gardner bought Manor Farm in 2004 - it had become very run down but Judy had avision to turn it into something very special. She has lovingly restored the farm and itsbuildings to create a stunning boutique hotel, one of the UK's top cookery schools and aworking farm. Collectively called EckingtonManor, it offers sumptuous bedrooms and suitesall of which have been designed by Judy herself. The cookery school offers a host of courses,ranging from basic knife skills to advanced courses for professional chefs. Eckington Manorhas a core belief that people should be encouraged to buy British, favour local producers andhonour seasonality.

Not only does Judy believe that this means everyone would eat a lot more healthily andenjoy more flavoursome food, it also makes sense to support the regional economy and helpcut down the carbon footprint. Judy has been involved in the food industry for over 30 yearsand her philosophy on food is now borne out at EckingtonManor. It is unique in the fact thatmuch of the food for the cookery school and its hotel guests is produced on Judy's very ownfarm. You couldn't get much fresher than that and one of the reasons Eckington-producedfare, such as its breakfast sausages, keep on winning awards.

Born in Tuscany, Felice got his first job in catering at the age of six. At fourteen, he took a three-year cookery course at the FerdinandoMartini Catering College inMontecatini Terme, honinghis skills working in the kitchens of Italy’s top hotels and ski resorts during holidays. Onqualifying, he was asked to join the Royal Shakespeare Theatre restaurants in Stratford-upon-Avon as a Commis Chef. In 1988, the Royal Shakespeare Restaurants acquired a hotel inChipping Campden and Felice was appointed as head chef at the Seymour House Hotel. At23, he became ChefManager, remaining at Seymour House Hotel for over 15 years. In the 90s,Felice created the “Pasta Club” which took on a life of its own attracting some 1000members.

Felice now owns two award-winning restaurants in Worcestershire - Fusion Brasserie andFusion too - which he runs with the help of his wife, Fiorinda, son, Daniel and his wonderfulteam. He specialises in using fresh, local produce to create delicious food with an Italiantwist. Felice is passionate about local produce and spends much of his time working withgrowers and producers as well as schools and colleges to help promote Worcestershire foodand drink. His main love is developing recipes and any food challenges thrown at him. In2010 he was head hunted by celebrity chef Jean Christophe Novelli and also works alongsidehim at the Novelli Academy, one of the finest cookery schools in the world.
