    Manufacturing process says us about the making of chocolates. How the

    chocolates are been made. The various stages it had to pass through so thatwe can have a delicious and a tasty chocolates. Following step gives us a

    complete idea about the manufacturing process of chocolate.

    Receiving the raw material :

    Raw material, i.e., cocoa beans is brought to the factor in the processing

    zone area. Before starting the production the quality of the cocoa beans

    is checked so that the best quality of chocolates can be enjoyed.

    Roasting :After the quality are checked and real production starts. The cleaned and

    stored seeds are sent to giant rotating ovens where they are roasted.

    Roasting the seeds releases the rich aroma and delicious flavor or

    chocolate. Roasting can last anywhere from 30 min to 2 hours. When

    finished the roasted seeds are a deep, rich brown.

    Crack, Fan, Winnow :

    The roasting process makes cocoa shells rather brittle. Now

    its time to send the seeds through a machine called a

    winnower that removes these seed thin shells.

    Inside the winnowing machine, notched cones crack

    open(rather than crush) the seeds. The brittle shells fall off

    and giant fans blow them away. What remains are the nibs

    the tasty centers of cocoa seeds that eventually become

    chocolate. Strainers sort these nibs according to size.

    Grind :

    Now the cocoa nibs are ready for the mill. Heavy metal discs do the work,

    grinding the nibs into a thick paste that will eventually become chocolate.

    The grinder generates enough friction and heat to liquefy the nibs into a

    thick paste called chocolate liquor. Despite its name, its actually contains

    no alcohol,

    Some chocolate liquor is pressed to remove the cocoa butter. Further

    processing turns into cocoa powder. But unpressed chocolate liquor is

    used to make chocolate

    Mixing :

    To make chocolate, unpressed chocolate liquor is blend with

    condensed milk, sugar and wextra cocoa butter. Machines

    churn the liquor to mix the ingredients.

    The raw mixture of chocolate liquor , milk, sugar, ad cocoa

    butter is churned until, few hours later, it becomes coarse,

    brown dough called crumb

    Refine :

    Now the thick chocolate crumb needs to be refined to make the

    chocolate even silkier. Giant steel rollers do the job of smoothing out

    the gritty mixture. The giant rollers break down the tiny particles of

    milk, cocoa and sugar so the batter has a creamy texture.

    One has to be careful, however. Too little refining and the chocolate

    will be grainy. Too much refining and the chocolate with be pasty and

    gummy.

    Temper :

    At last, its time to mild that candy bar. First, the chocolate

    must be tempered to give it a glossy shine and smoothness.

    Then, it can be poured into a mold.

    The chocolate is first heated and cooled repeatedly, until it

    gets a shiny, smooth look. That means it will melt evenly in

    your mouth

    Mold :

    Now, its ready to put into the mold.
