Racer Baseball Camps Murray State Baseball will be hosting a pair of camps this fall, beginning with the Racer Baseball Prospect Camp which will be held October 1 beginning at 9 a.m., at Reagan Field and the Pitcher and Catcher Winter Camp Series starts its four ses-sions beginning November 13. Cost of the prospect camp is $130 for a pitcher or positional player and $165 for both positions. The pitcher and catcher camp is $180 for all four sessions. The pros-pect camp will give players the opportu-nity to showcase their tools and abilities to the Murray State coaching staff, along with other coaches from the area that will be invited. Players will be evalu-ated both offensively and defensively in the morning. The afternoon portion will consist of a live game. Campers will split into teams and compete against one another to showcase their skills under live conditions. The camp is open to high school players entering grades 9-12. The pitcher and catcher camp is directed toward teaching and developing the skills it takes to be a successful pitcher or catcher. The camp series will take place one day a week (Sunday) over a four-week span. Players will be instructed on different skill sets directly related to pitching and catching. Apple Chicken Quesadillaoriginal recipe makes 12 triangles4 Flour tortillas (approx. 8-inches wide)1 cup cooked, shredded or chopped, chicken meat1/4 lb cheddar or Monterey jack cheese sliced or grated1 apple, sliced1/4 cup salsa

Heat a large skillet on medium high heat. Place one tortilla in the skillet. Flip it a couple of times with a spatula, then let it sit in the pan heating up until air pockets form and parts of the tortilla begin to puff up. Flip it again. Place cheese slices on half of the tortilla, at least 1/2-inch from the edge of the tortilla. Add chicken pieces on top of the cheese. Fold the tortilla over like an omelette, and press down on the folded tortilla with the spatula. Lower the heat to medium. At this point, if you have enough room in your skillet, you can add a sec-ond tortilla to the pan to begin to heat it up. When the cheese inside the quesadilla has melted, remove the quesadilla to a cutting board. Open it wide and layer on apple slices and salsa. Fold the tortilla back again, and cut it into 3 triangles, as if you were cutting a pie. Repeat with the remaining tortillas.

1 16-ounce loaf of Italian bread or French bread1/2 cup (1 stick) unsalted butter, softened2 large cloves of garlic, smashed and minced1 heaping tablespoon of freshly chopped parsley1/4 cup freshly grated Parmesan cheese (optional)

Method 1 - ToastedPreheat oven to 350°F. Cut the bread in half, horizontally. Mix the butter, garlic, and parsley together in a small bowl. Spread butter mixture over the the two bread halves. Place on a sturdy baking pan (one that can handle high temperatures, not a cookie sheet) and heat in the oven for 10 minutes. Remove pan from oven. Sprinkle Parmesan cheese over bread if you want. Return to oven on the highest rack. Broil on high heat for 2-3 minutes until the edges of the bread begin to toast and the cheese (if you are using cheese) bubbles. Watch very carefully while broiling. The bread can easily go from un-toasted to burnt. Remove from oven, let cool a minute. Remove from pan and make 1-inch thick slices. Serve immediately.Method 2 - SoftPreheat oven to 350°F. Make the butter, garlic, parsley mixture as above. Make 1-inch thick slices into the bread, but do not go all the way through, just to the bottom crust. Put a teaspoon or two of the but-ter mixture between each slice. Wrap the bread in aluminum foil and heat for 15 minutes in the oven.

Bread Pudding1 loaf French bread, at least a day old, cut into 1-inch squares (about 6-7 cups)1 qt milk3 eggs2 cups sugar2 Tbsp vanilla extract1 cup raisins (soaked an hour or 2 in 1/4 cup bourbon)1/4 teaspoon allspice1/4 to 1/2 teaspoon cinnamon3 Tbsp unsalted butter, meltedBourbon Sauce:1/2 cup (1 stick) butter, melted1 cup sugar1 egg1 cup Kentucky bourbon whiskey

Preheat oven to 350°F. Place milk in a large mixing bowl and add the bread that has been cut into squares. Press the bread into the milk with your hands until all of the milk is absorbed. In a separate bowl, whisk the eggs, then whisk in the sugar, vanilla, allspice and cinnamon. Pour over the bread and milk mixture. Add the bourbon soaked raisins and gently stir to combine. Pour the melted butter into the bottom of a 9x13 inch baking pan. Coat the bottom and the sides of the pan well with the butter. Pour the bread milk and egg mixture into the baking pan. Bake at 350°F for 35-45 minutes, until the liquid has set. The pudding is done when the edges start getting a bit brown and pull away from the edge of the pan. Can also make in individual ramekins. While the bread pudding is cooking, make the bourbon sauce. Melt the butter in a medium saucepan on low heat. Add the sugar and egg and whisk to blend well. Slowly cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon, then remove from heat. Do not al-low the mixture to simmer! (Or the sauce will curdle. By the way, if your sauce curdles, just take it off the heat and blend it smooth in a blender.) Whisk in bourbon to taste. Whisk again before serving. The sauce should be soft, creamy, and smooth. Serve the bread pud-ding with bourbon whiskey sauce on the side; pour on to taste. Best fresh and eaten the day it is made.

* Storing your small engine equip-ment. Most fuel available today contains ethanol, and ethanol can

wreak havoc on small engines if they’re not treated before storage. Over time, the water and ethanol will separate and sink to the bottom of the fuel tank, leading to corro-sion, stalling and engine damage. To make sure your engines start up come spring, fill your tank with fresh fuel and add a stabilizer to the tank. It’s also a good idea to store

your small engine equipment indoors to protect it from the elements.

* Storing your patio furniture. Before putting your outdoor oasis away, make sure to wash or brush off any loose debris. Re-move surface stains with a cleaner such as 303 Multi-Sur-face Cleaner and make sure to pro-tect your cushions from future spills
