Watermelon Martini

Puligny-Montrachet, located south of Meursault and to the north of Chassagne-Montrachet, shares with Chassagne a handful of the greatest white wine vineyards in the world.

Method:

Place the calamari into a bowl then add the chopped garlic, lemon juice, olive oil and salt and pepper. Let marinate for about 30 minutes. Using a small scoop, remove the core from the fennel. Using a mandolin, shave the fennel as thin as possible and place into a bowl of ice water and reserve. Clean the manche and reserve. After the calamari has marinated, grill the calamari for about 30 seconds each side. Cool, then cut the calamari into 2” rounds. Refrigerate the calamari until plating.

In a small bowl combine the vinegar and lemon juice. While constantly whisking, drizzle in the olive oil in a thin stream. Season with salt and pepper and reserve.

Place the gelatin into a bowl of ice water. Meanwhile, place juice and salt into a small saucepan and heat on low. When gelatin sheets become soft, remove them from the water and squeeze out the excess. Place the gelatin into the hot watermelon juice and stir until the gelatin is dissolved. Pour watermelon juice into a shallow bowl and place immediately into the refrigerator for at least 45 minutes.

How has the Cellar Club enhanced your personal and professional life?The Biltmore is such a wonderful place to go for a dinner, drinks, exercise, swimming or just a get-away. No other location has so many activities to offer in such a gorgeous setting.

What do you love most about your career?Practicing medicine, I get to be such an important part of so many lives. Since my wife works with me, she gets to share in that as well. We love our business so much that we don’t feel like we are really working. To be able to earn a living at something you love to do is something we feel truly fortunate about.

What are some of your favorite travel destinations when you want to “get away?”Our favorite trip together was the Galapagos Islands. After some major problems getting through Customs, we experienced nature with only minimal interference from humans. The abundance of different species we were able to see matched with the beautiful scenery is tough to beat.

If you were stranded on a desert island and could only take three things, what would they be and why?A knife, fishing pole and collection container for rainwater. Hopefully these things would keep me alive for a while.

Do you have a favorite cuisine or food item? Explain.Italian-They know how to really enjoy life and their food. Even simple foods such as pizza are wonderful. Plus, Italian food seems to really go well with wine (including our favorite-Amarone).

What would you say is your one true passion?My family. My wife and I have an incredible relationship. Even though we spend virtually 100% of our time together (at work and at home), we never grow tired of each other’s company. Our son Ethan (4) is the joy of our lives and we look forward to the birth of Trevor at the end of May.

What has been the most memorable experience (so far!) You have had at the Biltmore?Teaching my son how to swim in Biltmore’s amazing swimming pool.

Do you support any charitable causes?We support many different causes. Some include the Boys and Girls Club, Baptist Health Foundation’s Founders Society, Charlee and the International

Kids Fund. We have been extremely fortunate and we believe strongly in giving back to the community to help those that have not been as lucky.
