2012 has been a year of celebrations, both large

and small. From major international events like

the Olympics and the Queen’s Diamond Jubilee

to smaller, more intimate celebrations that each of

us mark in our own private ways - food and dining

always plays a major role in marking these events.

The menu might be different and families or

companies might be smaller, but Christmas remains

among the most important holidays. It’s part of

our culture to come together to laugh and eat in a

festive setting and Christmas is the culmination of all

these celebrations.

After all of the shopping, presents, secret Santas,

charitable donations, posting greetings cards, church

services, school plays and trips to the pantomime,

Traditional TurkeyWhile the most popular choice for

Christmas dinner today is turkey, the bird

was not introduced to Europe until after

the discovery of the Americas, its natural

home, in the 15th century.

In medieval times, goose was the most

common option. Venison was also a

popular alternative in medieval Christmas

celebrations, although the poor were not

allowed to eat the best cuts of meat.

When Victoria first came to the throne

however, both chicken and turkey were too

expensive for most people to enjoy.

In northern England roast beef was the

traditional fayre for Christmas dinner while

in London and the south, goose was still the

favourite. Many poor people made do with

rabbit. On the other hand, the Christmas

Day menu for Queen Victoria and family in

1840 included both beef and of course a

royal roast swan or two!

By the end of the century most people

feasted on turkey for their Christmas

dinner, which were primarily raised in

Norfolk, Suffolk and Cambridgeshire.

They would be walked the 80+ miles to

London on foot; a journey which they may

have started as early as August. Norfolk is

still a prime breeding and farming area for

turkeys in the UK today.

Mince Pies were originally baked in

rectangular cases to represent the

infant Jesus’ crib and the addition

of cinnamon, cloves and nutmeg

was meant to symbolise the gifts

bestowed by the three wise men.

Similar to the more modern mince

pies we see today, these pies were

not very large and it was widely

believed to be lucky to eat one

mince pie on each of the twelve

mince pies were originally made

of a variety of shredded meat

along with spices and fruit. It was

only as recently as the Victorian era

that the recipe was amended to

● 1 tsp tomato purée

● dash Tabasco sauce

● 1 tsp salad cream

● 1 tsp lemon juice

(Alternatively, use Lion’s Prawn Cocktail Sauce if you’re pinched for time @ £6.18 - SPC )

The Salad● 4 Little Gem lettuces, shredded

● 75g / 2½oz Small cherry tomatoes, halved

● 500g cooked prawns ( 250/350 Coldwater Prawns @ £29.10 - PRASTE003 )

● sliced and chopped coriander and lemon for garnish

● Pinch of paprika, for garnish

The PreparationIn a bowl, mix together the mayonnaise, ketchup, tomato purée, Tabasco, salad cream and lemon juice until well combined, alternatively use Lion’s ready made Prawn Cocktail Sauce.

Mix the shredded Little Gem lettuce together with the tomberries or cherry tomatoes. Divide the salad among four serving glasses.

Mix the prawns together with the sauce, reserving four prawns for garnish.

To serve, spoon the prawn cocktail mixture over the salad in each glass. Garnish each glass by hooking a prawn over the rim.

Sprinkle over a bit of paprika, coriander and lemon. Serve immediately.

● The majority of Shropshire Blue is not actually made in Shropshire, but in Leicestershire and Nottinghamshire.

● Cheshire is one of the oldest British cheeses. It dates from Roman times and even gets a mention in the Doomsday Book.

● The terms “Big Wheel” and “Big Cheese” originally referred to those who were wealthy enough to purchase a whole wheel of cheese.

● Some ancient Roman houses had a special kitchen, called a careale, just for making cheese.

● Soft cheeses contain less fat than hard cheeses.

● The Pilgrims included cheese in their supplies onboard the Mayflower in 1620.

● There are just 6 dairies in the world licensed to make Blue Stilton cheese and by law can only be made in the three counties of Derbyshire, Leicestershire, Nottinghamshire.

● The famous cheese rolling at Cooper’s Hill In Gloucestershire, was hit by food rationing of WWII, so a wooden ‘cheese’ was used until 1954. It had a small hole inside the packing where a tiny piece of cheese was placed, to maintain the ‘rolling of cheese’! Special permission was granted for this by the Ministry of Food.

● In 1987, a 1,400-year-old piece of cheese was unearthed in a Tipperary bog in Ireland. It was still edible!

Delicious & Decadant:Duck FatDuck fat is an byword for cooking food at its tastiest. With a silky mouth feel, propensity for deep browning and delicate savory flavour, duck fat seems to spin anything it touches into culinary gold. Best of all, it can be heated to a high temperature without burning.

You can use duck fat without guilt. It’s low in saturated fat (20% less than butter) and high in unsaturated fat, making it one of healthiest animal fats you can eat. It’s the cooking fat of choice in Southwestern France where the incidence of heart disease is about half that of the rest of France. Duck fat is also mostly a monosaturated fat, making it less unhealthful than pork or beef fat.
