With kitten season upon us, let’s not forget the almost adult cat. These are often the 9-11 month old kittens that were born in mid to late summer or even in the fall, after the demand for kittens has subsided. Most of the people who wanted kittens had already adopted them, leaving ones like Nessie to grow up to look like cats!! Ember was found in a neighborhood where someone left her to fend for herself, a mystery cat that no one knew anything about except that she was there. New LA Super Plants for Spring 2016
Most of us are familiar with LSU AgCenter Super Plants program, a promotional program advertising tried and true plants that perform well in all of Louisiana’s climates. Several different flowers, shrubs, or trees are promoted each year because of their exceptional endurance and display of beauty within the state. Two annual flowers were promoted for the Spring of 2016.The first of which is an award winning cultivar of Salvia farinacea, ‘Evolution’
Salvia. These wonderful Salvias perform best in an all-day sun location. For optimal performance, they should be planted about 12-18 inches apart. They are considered a medium sized plant that will reach a height of 18 inches, which would work exceptionally for a 2nd tier planting in a layered garden
bed. Maintenance is a breeze due to the absence of insect and disease pests and the fact that dead heading is not necessary for season long blooming from late spring through fall. The second LA Super Plant promoted this spring is the ‘Señorita Raspberry’ Angelonia. Angelonias are well known for their exceptional performance in Louisiana and this cultivar is of no exception. Very similar in appearance to their Super Plant cousins, the Serena Series, ‘Señorita Raspberry’ provides us with a beautiful shade of purple. These plants will reach heights between 12 and 24 inches tall and should be planted on 12 inch centers. Angelonias are termed summer snapdragons because of the shape of their flowers which are similar in appearance to their cool season doppelgängers. Look to see what your garden center has available, if not, then ask for them to bring some in.
Lush foliage adds a tropical touchWith summers lasting forever in South Louisiana, many gardeners get the feeling that they are living in a tropical paradise for most of the year. We all know this isn’t quite the case, knowing that every once in a while we receive winter time temperatures below 20°F. However, we can have the option to plant many different plants that resemble the flora of the tropical islands. Have you noticed the lush, broadleaved foliage of shell ginger? Alpinia zerumbet is native of India but performs well in Louisiana. Most are familiar with the variegated version but there is a solid green version that performs just as well. The lance shaped foliage of both plants will eventually get to be about 18 inches long and 4 inches wide. The bush will get about 10-14 feet tall depending on the severity of winter. The majority of praise given to shell ginger primarily is given to its foliage qualities but don’t forget about the drooping, showy flowers produced on two year old growth. Gingers are not the only plants that provide a tropical experience. Caladium bulbs are another plant that give us lush, tropical texture. At the beginning of the season you will find these plants as bare root tubers but at this point they will be available as transplants. Theses leafy textured foliage plants will reach about 12 inches tall and come in several colors including white, pink, red, and combinations of all three. Aspidistra elatior, the cast iron plant is another broadleaved plant that provides a tropical look. These plants have very durable, glossy green leaves that reach a height of up to 3 feet tall. They can strive in various soil types, making them valuable to many gardeners across the state. Elephant ear plants, Alocasia macrorrhiza, provide us with one of the coarsest textures available. The leaves will reach a prominent stature of 2-4 feet in length and width. The elephant ear is a plant, which give us the most tropical looks in all of the plants grown in southern gardens. Look to some of these plants to your garden in order to add a tropical feel to your garden space.

Señorita Raspberry
With this issue of Northshore Plus! and Plaquemines & Westbank Plus!, we celebrate our 25th anniversary. On May 19, 1991, two incredible things occurred in Slidell, Louisiana: the FBI came into Northshore Regional Medical Center and arrested the top four managers of the hospital and the first issue of Bargains Plus! hit the streets. Since my wife worked at NRMC, her story was much more exciting than mine….at the time. This was a era of no smart cell phones, no tablets, no Nooks, no Facebook, Twitter, Instagram, Snapchat, Linked In or carefree selfies. Social media was in the society pages of the local DAILY newspaper, which decided to go cheap rogue with three day a week home delivery
while the Advocate from Baton Rouge decided to put on their big boy pants and give the New Orleans metro market a real daily, not a watered-down version of one dictated by a silver-spoon-in-his-mouth group media owner. But I digress. It’s been 25 years of watching the way we communicate change drastically - especially folks under 40, who apparently will die a horrible death if they are separated from their electronic devices for more than 30 minutes. Google 25 years ago was the last name of a comic strip character from the Depression (Barney Google) and in fact there was not even Barney the purple dinosaur 25 years ago. ( I wonder…does Barney Google?)
We ran close to 600 classifieds each issue back then and people saved up big time to afford a color ad, which we did not offer our first couple of years in business. To create our paper, we had to pay over $100 for a megabyte of RAM memory and were limited in most cases to a computer that could only accommodate 8 megs of RAM. Delivering the paper to the printer was done physically and to create color, we had to cut out the color portion with a plastic material called ruby lithe or amber lithe and carefully place in over the pages to be photographed and then plated in a two to three hour process. To deliver a print file by computer originally cost $1,000 and the utilization of a T-1 phone line, which to my recollection cost nearly as much as a new compact car back then.
It hasn’t been all silver during these past 25 years, but it has been damn close. The creation of faster and more complex computers and the maturing of the Internet made our job as publishers a heck of a lot easier. Deadlines became shorter and less stressful, proofing an ad or a story became instantaneous and technological mistakes became almost a thing of the past.
Think of the times we have endured and experienced during our 25 years: the Millennium and the Y2K controversy, the 2000 “hanging chad” Presidential election, 9-11, LSU’s first football national championship since 1958, all six LSU National Championship baseball titles, Katrina and Rita, the Saints winning the Super Bowl, the OJ. Simpson Chase and Trial, LSU’s third national football championship, the career of Shaquille O’Neal, Isaac, the BP spill, the country’s first black president, the Clintons, Rush Limbaugh, Chinese drywall, the return of the NBA to New Orleans, two major stock market crashes and runaway political correctness.
That’s the silver. The gold is in the rings of my wife and I. For nearly 50 years, Hilda Mae has been putting up with my procrastination, my wanderlust, my short fuse and my lack of understanding. For this, she needles me. And for the most part, it is deserved needling, because I am merely a man and she has put up with my cr_p for half a century. But she really loves me. And me her. So we needle each other. And these needles sew our relationship closer and sow the seeds for a continued wonderful life together (and another chance for me to write puns in my column). So there! On May 28th, we will renew our vows and have a group of friends, family and associates gather around a food bus and have what should be an unforgettable time. It’s on a Saturday and we married on a Saturday. At Prompt Succor Catholic Church in Chalmette. I always like to say I was the promptest sucker that day by making it on time to my own wedding (you would have had to have been there six hours earlier in the streets of the parish to know what I mean). When it comes to cooking it’s not the recipes that are important as much as it is the cooking method.There are only a few basic methods from which all recipes are derived and once you master those you can execute just about any recipe. These methods are divided into three categories, dry heat, moist heat, and a moist heat and dry heat combination. We will focus on the combination cooking method today. This method includes braising and stewing which happens to be my personal favorite of all cooking methods and they are perfect for this time of year. They are hearty and warm and very much a comfort food. We use this method to cook braised dishes such as Osso Bucco, Lamb Shank, and Braised Short Ribs. This method is perfect for cooking proteins that would otherwise be tough if you cooked them any other way. The proteins are cooked low and slow so the connective tissue has time to break down into collagen. the result is a fall off the bone tender finished product that produces its own deep, rich, and flavorful sauce.
Once you learn these steps you can use them to braise any type of meat that lends itself to this cooking method. The actual recipe and what you season and flavor it with is up to you. Remember this method is meant for meats that have a good bit of connective tissue and would not be tender cooking by any other method. Please do not try to do this with a beef tenderloin or a similar cut. This method is not for that, it would be a waste of a beautiful piece of meat because beef tenderloin is just that, tender, on its own. Tenderloin does not have any connective tissue to break down and the point of braising is to break down those tissues into collagen which is what adds all that flavor. Here are the basic steps for a braised dish.
1. Season meat with salt and pepper and dust with flour. Flour is optional but adds flavor and helps thicken the sauce as a roux would.
2. In a deep sided pot or pan heat clarified butter or oil and brown meat on all sides. Cast iron pots work great as do deep baking dishes.
3. When meat is seared to a deep brown remove from the pan and add aromatics. Aromatics would be your mirepoix which is diced carrots, onions, and celery OR as we in Louisiana call it HOLY TRINITY which is onions, celery, and bell peppers. This is the foundation of your sauce. I prefer mirepoix for braised dishes. I find the carrots add the best flavor once they are caramelized and cooked down. I also add chopped garlic right before I move to step 4
4. Deglaze the pan with an ounce or two wine, juice, stock, or any other type of liquid you want to impart into the flavor. As the liquid burns off and reduces scrape the bottom of the pan to release any residual flour, meat, or vegetable. This adds yet another layer of great flavor
5. Return meat to the pan over the vegetables side by side and add enough braising liquid to cover the meat half way. You may use wine, stock, juice, or any other liquid you want. This liquid will eventually reduce and thicken along with the pan scrapings and collagen to make your sauce
6. Add any herbs such as bay leaves, thyme, or rosemary. I tie a bundle of thyme up in butcher’s twine for just about everything I braise. Rosemary would be a good choice if you are doing lamb shanks
7. Cover and place in an oven at 300-350 degrees. When it comes up to temperature you want it slowly simmering as it cooks. You may also do this on the stove top. Bring the liquid to a boil and reduce to a low simmer and cover.
8. Cook until fork tender checking every hour or so to add more liquid if needed.
9. When finished you should have a fairly thick sauce. You may thicken further if you like by removing meat and bringing liquid to a full boil to reduce to your desired consistency.
That is, it. Learn this method and you can braise or stew anything. Get creative and experiment with different herbs and braising liquids. You may add tomato if you want to which adds nice flavor to a dish like Osso Bucco and helps with the breaking down process.
